SILVA SPANISH CHORIZO CROSTINI WITH

ROMESCO SAUCE

Ingredients:


- 1 Package of Silva Spanish Chorizo
- 2 Baguettes

- 1 16oz. jar of roasted red peppers, drained

- 14oz. can of Roma Diced Tomatoes

- 2 Tbsp. chopped flat-leaf parsley ( plus some for garnish )

- 2 Tbsp. Sherry Vinegar or Red Wine Vinegar

- 1 ½ tsp. of Smoked Paprika

- ¼ tsp. Cayenne Pepper

- 1 tsp. Kosher Salt

- 3 cloves of Smashed Garlic

- 4oz. Extra Virgin Olive Oil ( with some extra for baguette slices )

Instructions:  
 

  1. In a blender or food processor, combine all the ingredients(except the Chorizo and bread of course) until smooth and creamy.

  2. Salt and pepper to taste if needed.

  3. Pre heat oven to 375-400 F.Slice baguette diagonally in ½ inch slices.

  4. Arrange the slices on a baking sheet and brush both sides with olive oil & toast in oven for 8-10 minutes until crispy(don’t burn!)

  5. While the baguette is toasting, fry the Spanish Chorizo over medium-high heat for 10-12 minutes or until golden and slightly charred on the outside.

  6. Cut the cooked Spanish Chorizo diagonally into ¼ inch slices.

  7. Spoon Romesco on the baguette slice & place one piece of sliced Chorizo on top of sauce and baguette.

  8. Top with a little more Romesco with a pinch of chopped Italian Parsley and Parmesan cheese for garnish (if desired).

  9. Serve and bask in the compliments that will be coming your way!
