DIRTY RICE & BEANS WITH BOURBON BACON SMOKED SAUSAGE
This flavorful dirty rice makes for a hearty and tasty dish that everyone will savor.

Ingredients:
- 1 tbsp olive oil
- 2 slices bacon, diced
- 1 pkg (12 oz) Silva Bourbon Bacon and Cracked Black Pepper Sausage, sliced
- 1 onion, diced
- 1 red pepper, diced
- 2 cloves garlic, minced
- 1 jalapeño pepper, seeded and diced
- 1 tbsp finely chopped fresh thyme
- 1 tbsp Cajun seasoning
- 1 ½ cups long-grain white rice
- 2 tbsp tomato paste
- 3 ½ cups sodium-reduced chicken broth
- 1 tbsp Worcestershire sauce
- 1 tbsp cider vinegar
- 1 can (14 oz) kidney beans, drained and rinsed
- ¼ cup finely chopped fresh parsley, divided
- 6 eggs, fried (optional)
Instructions:
1. Heat oil in large skillet set over medium heat; cook bacon for 2 to 3 minutes or until edges start to brown and fat starts to render.
2. Stir in sausage, onion, red pepper, garlic, jalapeño, thyme and Cajun seasoning. Cook for 5 to 8 minutes or until sausage starts to brown and vegetables are tender. Stir in rice and tomato paste; cook for 1 to 2 minutes or until coated. 

3. Stir in broth, Worcestershire and cider vinegar; bring to boil. Reduce heat to low; cover and cook for 12 to 15 minutes or until most of the liquid is absorbed and rice is tender. Add beans. Cover and let stand for 10 minutes. Fluff with fork and stir in half of the parsley. 

4. Divide rice among 6 plates. Top with fried eggs (if using) and garnish with remaining parsley. 

Tip: Alternatively, top with poached eggs or serve with scrambled eggs.
