-2-3 Silva Smoked Italian Sausage, chopped
-(Add 1 chopped Silva Andouille sausage, for a more spicy soup)
-4 cups chicken broth
-¾ lb small red skinned potatoes, thinly sliced
-1 Tbs white wine
-4 kale leaves, trimmed and sliced thin
-1 clove garlic, smashed and chopped
-½ chopped white onion

1. Saute chopped sausages, onion and garlic in 1 tsp Olive oil, in a medium heavy pan over medium heat-about 3 minutes.
2. Add sliced potatoes, chicken broth and white wine bringing to a boil. Reduce heat to simmer, cover and simmer until potatoes are almost tender-about 10 minutes.
3. Add kale and simmer uncovered until kale and potatoes are tender-about 15 minutes longer. 4. Season to taste with salt and pepper.
5. Serve. |
