Tantalizing layers of spinach, portabella mushrooms and mashed potatoes topped with your favorite sausage make this an historical event.

- 4 Silva Sausage Rounds
- 4 Large Portabella mushrooms
- 2 Tbs Olive Oil
- Salt and pepper to taste
- 1 package instant mashed potato mix, prepare 4 servings, according to package directions
- ½ pound spinach, washed, dried and chopped
- ¼ cup chicken broth (or water)
- 2 Tbs Balsamic vinegar
- 1 can (29 oz.) stewed tomatoes



1. In a large non-stick skillet, cook sausage rounds on medium heat until done, about 5 minutes per side.

2. Place sausages on a plate, cover with foil, and place in a warm oven.

3. Using the same skillet, heat oil on medium heat, add Portabella mushrooms and cook until soft, about 6 minutes per side. Add salt and pepper to taste then transfer to the same covered plate.

4. In the same skillet, add chicken broth (or water), add spinach and Balsamic vinegar; cook over high heat, stirring constantly until spinach is wilted. (About 3 minutes).

5. To assemble: Place portabella mushroom on center of plate; add mashed potatoes on top of mushroom, then sausage patty. Next, add spinach on top of sausage, and top with a ladle of stewed tomatoes.
