A delicious meal for breakfast, lunch or dinner! Easy to prepare and serves up to 8 so it’s perfect for parties or leftovers.

- 1/2 lb. Italian Chicken Sausage
- 1/2 lb. sliced mushrooms
- 1 Tbs butter
- 1 sliced zucchini
- 1 cup grated mozarella cheesse
- 3 eggs
- 3/4 cup milk
- 1/2 tsp dried oregano and basil
- 1 - 9" un-baked pie shell

1. In a skillet, cook 1/2 lb. Italian Chicken sausage until browned; drain, reserving a small amount of the drippings.
2. Saute 1/2 lb. sliced mushrooms in the drippings for 5 minutes, or until tender; drain and set aside.
3. Melt butter in skillet, add zucchini and saute until tender; drain.
4. Place the sausage in the pie shell, sprinkle with half the Mozarella cheese, spoon the mushrooms on top, then follow woth the remaining cheese. Top with zucchini.
5. In a bowl, beat together 3 eggs; add milk, basil and oregano. Pour into the pastry shell.
6. Bake at 350 degrees for 55 minutes, or until set. Let stand 10 minutes before serving. |
