 | Pisto Manchego

- 2 yellow onions, chopped
- 1 red & 1 green bell pepper, chopped
- 1/3 cup olive oil
- 2 garlic cloves, minced
- 4 roma tomatoes, peeled and chopped
- 3 zucchini, halved lengthwise and cut crosswise into 1/2-inch pieces
- Spanish Chorizo, 14 oz package
- 1 1/2 tsp salt
- 1/4 tsp freshly ground black bell pepper
- 1/2 tsp sugar
- 2 tsp red-wine vinegar
- Cooked brown rice

1. In a large saucepan cook the onions and the bell pepper in the oil over moderately low heat, stirring until the vegetables are softened.
2. Add the garlic and cook the mixture, stirring for 5 minutes.
3. Add the tomatoes, zucchini, chorizo, salt, black pepper and sugar and simmer the mixture, stirring occassionally, for 30-40 minutes.
4. Transfer the Chorizo with tongs to a cutting board and slice them thin.
5. Stir the vinegar into the tomato mixture.
6. Add the sliced Chorizo
7. Spoon over cooked brown rice and stir. |
